No boil pasta bake
Ingredients
- 400g pasta shells
- 500ml passata
- 500ml vegetable stock
- ½ courgette, diced
- 1 red pepper, diced
- 1 medium red onion, diced
- 1 tsp Italian seasoning
- 90g cheddar, grated
- 150g mozzarella
Method
- heat oven to 180°C
- fry courgette, pepper, onion until soft
- add pasta shells, passata, stock to large ovenproof dish
- add Italian seasoning, salt, pepper, mix well
- sprinkle grated cheese and torn mozzarella on top
- cover with foil, bake 35 mins
- remove foil, bake 10-15 mins until cheese browned
